Banana and Pear Loaf

What on earth do you do with pears that look like this?

You make banana and pear loaf of course!

What could be better than delicious warm banana bread with latherings of butter on a cold and miserable day? Banana and pear loaf of course, because you wouldn’t be wasting good produce by using them up in this recipe instead of throwing them away!

I did a search on the internet for a banana and pear loaf recipe and a few came up, using chopped pears. I didn’t want chunks of pear in my loaf and the pears were already pretty soft and wouldn’t have held their shape anyway, so used the recipe from Mummy on a Budget, which called for grated pears. Mine were so soft I could mash them with ease. I used 3 pears and after cutting away the bruised bits I ended up with approximately the equivalent of flesh from 1 pear.

I mashed the bananas and pears in the bowl with a fork and added all the ingredients and mixed it together. I love one bowl, super easy recipes!

I checked the loaf at 45 minutes then reduced the heat of the over to 160° C (to prevent it burning on the top and bottom) and baked for another 10 minutes until the skewer came out clean.
